Clotted Cream

Clotted Cream

This delicious teatime spread is made from fresh cream baked in an oven at a low temperature over the course of several hours, allowing it to slowly clot and form a thickened cream suitable for spreading. The end result is a rich and velvety cream with a slightly nutty taste that is irresistible when served with jam on freshly baked scones. Along with a pot of tea, this afternoon pick me up is known as the “Cream Tea.”

Clotted cream is the perfect topping for a freshly baked scone. There’s nothing more heavenly than splitting a soft and buttery scone in half, loading it up with this rich and velvety cream and topping it with a generous spoonful of jam.

The question is, do you put the jam on first, then the cream like they do in Cornwall, or the Devonshire way, topping the scone with the cream first followed by the jam? Either way, clotted cream is one of the most delicious things you’ll ever try!
